Cookie Ingredients

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 cup pumpkin
1 cup milk chocolate or semi-sweet chocolate chips

Cream cheese frosting

4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract

Pumpkin Cookies Directions

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients (except for sugar)
  3. In a separate bowl beat butter, sugar and eggs.
  4. Mix in pumpkin at low speed.
  5. Stir together dry ingredients and pumpkin mixture with a spoon.
  6. Place on cookie sheet and bake for 12-15 minutes.

    Cream cheese frosting (optional)
    (1) In a large bowl, beat together the butter and cream cheese with an electric mixer.
    (2) With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy.
    (3) Beat in the vanilla extract.

Recipe notes

For extra sweetness, add chocolate chips or frost with cream cheese frosting.
