Description

This chunky dip with mozzarella cheese melts to magnificence when heated up. It's an easy, cheese-filled appetizer

Ingredients
  • 14 ounce artichoke hearts packed in water (drained and chopped)
  • 1 cup roasted red peppers, bottled (drained and chopped)
  • 1 1/2 cup mozzarella cheese (shredded)
  • 1/2 cup parmesan cheese (freshly grated)
  • 1 cup basil (finely chopped)
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1/2 teaspoon ground black pepper
  • 2 baguettes (sliced into 1/2 inch slices, brushed with olive oil and toasted)
Instructions

    Preheat oven 350 degrees.

    In a mixing bowl, combine artichoke hearts, roasted red peppers, both cheeses, basil, oil, garlic and black pepper.

    Transfer mixture into 1 1/2 quart casserole dish. Bake uncovered for about 15 minutes or until heated through.

    Serve warm on toasted baguette slices, topped with shaved cheese.
