OH-SO-CRISP, crunchy, cheesy chicken tacos completely baked to absolute PERFECTION. A super easy weeknight meal!
Ingredients
12 corn tortillas (extra thin)
12ounces chicken breast, boneless, skinless (cooked, chopped or shredded)
1packet taco seasoning
1/2cup cheese, shredded (of choice)

Preheat oven to 400 degrees.

Bake 2 chicken breasts with taco seasoning and shred or chop.

Wrap the tortillas in a slightly damp paper towel and microwave for 45-60 seconds, flip halfway through. This makes the tortillas easier to fold.

Add the chicken or your choice of filling to one half of each tortilla. Top with cheese then fold over, gently press down to seal each taco. If the tortillas tear, microwave for another 15-30 seconds.

Place tacos on a baking sheet. Use another baking sheet and put on top of the tacos, pressing them down. This prevents the tacos from opening during baking and helps the cheese seal the tacos.

Bake for 8-12 minutes or until the tortillas are golden brown. If they aren't getting crispy, remove the second baking sheet towards the end of cooking.
