Baked cream-poached Halibut

Description

Incredibly moist, tender flavorful fish that you would never guess was frozen. Use any white fish as long as the fish is FROZEN at the time of cooking.

Instructions

  1. Preheat oven 350 degrees.
  2. Place frozen fish fillets in a shallow baking dish and spread butter over the top of each fillet.
  3. Sprinkle spices on fish evenly.
  4. Top with bay leaves, then sliced onions.
  5. Pour cream over fish. Use enough milk/cream to cover bottom of pan 1/4" deep.
  6. Bake for 40 minutes (or until easily flaked apart).

Note

(1) Spread the butter on quickly as it will start to freeze shortly after contacting the frozen fish.

(2) The amount of spice needed will vary depending on the number of filets you are baking. Use more spice if needed, the key is to cover each filet evenly.
