Combine the diced tomatoes with salt and garlic in mixing bowl. Mix until well combined and let sit while chicken cooks.

Preheat oven to 400 degrees.

Flatten the chicken breasts with a tenderizer until a little less than 1 inch thick.

Combine Italian seasoning, salt, garlic powder, onion powder, and pepper in a small bowl and stir to combine.

Brush the chicken with olive oil then sprinkle with seasoning blend on each side.

Mix in remaining bruschetta ingredients. Place parchment paper on baking sheet, add chicken and place 3/4 of bruschetta on chicken. Cook until chicken is thoroughly cooked. Add remaining bruschetta topping and top with balsamic glaze. Serve with rice. We like to serve with cauliflower rice.
