Add whole, raw, chicken breasts, chicken broth, dried thyme, crushed red pepper, salt, and pepper. Bring to a simmer and simmer 15 minutes until chicken is cooked through.
3 Remove the chicken and place on a cutting board. Turn heat back to medium, stir in tortellini (stir well so it doesn't stick together). Chop or shred chicken and place back in soup.
4 Once the tortellini is cooked through turn off the heat, stir in the heavy whipping cream, spinach, and parsley.
5 Serve warm.
