Traditional Hungarian Hunter's stew recipe made with beef. You can serve this versatile main course with bread dumplings, pasta, rice or just by itself.
Ingredients
6slices bacon (diced)
1clove garlic (minced)
1/4cup red wine vinegar
2 1/2pound beef (cubed)
1cups onion (minced)
1cup carrots (sliced)
3cups beef stock
3/4cup rice (uncooked)
1 bell pepper, green (cubed)
salt (to taste)
ground black pepper (to taste)
Instructions

In large pot, cook bacon until it has rendered most of it's fat. Remove bacon from heat and set aside.

Pour all but a thin layer of fat from cooker and then saute' onions.

Add carrots and garlic to pot and saute with onions.

Return bacon to pot. Stir in vinegar, 2 cups of beef stock and beef cubes.

Season lightly with salt & pepper. Bring to a boil; reduce heat and simmer, covered for two hours or until beef is tender.

Turn up heat and stir in uncooked rice, green-pepper and remaining stock. Bring to a boil then reduce heat and simmer, covered for 20 to 25 minutes or until rice is cooked.

Add more stock if necessary and adjust seasoning if needed.
