A year-round favorite of soft fluffy goodness.

Ingredients
    Cookie Ingredients
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon, ground
  • 1/2 teaspoon nutmeg, ground
  • 1/4 teaspoon ginger, ground
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 cup pumpkin
  • 1 cup chocolate chips (milk chocolate or semi-sweet)
    • Cream cheese frosting
  • 4 ounces butter, unsalted (softened)
  • 4 ounces cream cheese (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

    Preheat oven to 350 degrees.

    Mix dry ingredients (except for sugar)

    In a separate bowl beat butter, sugar and eggs.

    Mix in pumpkin at low speed.

    Stir together dry ingredients and pumpkin mixture with a spoon.

    Place on cookie sheet and bake for 12-15 minutes.
    7. Cream cheese frosting (optional)

    In a large bowl, beat together the butter and cream cheese with an electric mixer.

    With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy.

    Beat in the vanilla extract.
Note

For extra sweetness, add chocolate chips or frost with cream cheese frosting.
