In a large bowl mix spinach, Greek yogurt, artichokes, garlic powder, and Dijon mustard.
3 Lay chicken breasts in a single layer in a 9x13 baking dish. Evenly distribute mixture over top of chicken breasts.
4 Lay 2 slices of mozzarella over top of each chicken breast.
5 Bake for 30 minutes or until chicken is fully cooked.
6 Let rest 3-5 minutes before serving.
7 We like to serve it with cauliflower rice.
