Instructions

  1. Preheat oven to 350

  2. Cut the peppers in half lengthwise, leaving the stems intact, and halving them also. Remove seeds and ribs.
  3. Using a hot skillet, sauté the ground beef, pork, onion, garlic, 1 teaspoon bouillon granules, and 2 teaspoons of the house seasoning.

    The extra house seasoning can be discarded or stored for up to 6 months
  4. Sauté until onions become translucent. Drain the fat off. 

  5. Add the rice, pepper-jack cheese, sour cream, tomatoes, green onion tops, soy sauce and the optional salsa to the meat mixture.

    Mix well and stuff the mixture into the peppers.

  6. In a small bow, combine the hot water and the remaining bouillon granules. Pour this mixture into a shallow casserole dish, large enough to hold all of the peppers.
  7. Place the stuffed peppers in the dish, cover with foil and bake for 25-35 minutes.
  8. Remove the foil and spoon all the juice from bottom of the casserole dish over the top of the peppers. Bake for an additional 10-15 minutes.
