Wonderful tacos from scratch. Super easy and delicious. Never buy packages again.

Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 medium onion, red (minced)
  • 1 pound ground turkey (or beef or chicken)
  • 2 cloves garlic (minced)
  • 1 tablespoon chili powder
  • 2 teaspoons cumin, ground
  • 2 teaspoons coriander, ground
  • salt (to taste)
  • 1 cup tomato sauce
  • 1/4 cup jalapeños (fresh, minced or other fresh chili peppers/chipotle peppers)
Instructions

    Heat oil in a skillet over medium heat until shimmering.

    Add onion, and cook, stirring often, about 4-5 minutes.

    Increase heat to medium-high and add the meat. Cook, breaking up the meat with a wooden spoon, until no longer pink, about 3 minutes.

    Stir in the garlic, chili powder, cumin, coriander and salt. Cook, stirring, for about 30 seconds, until fully incorporated and fragrant.

    Add tomato sauce and minced peppers. Cook, stirring occasionally, over low heat for 10 minutes.
Note

If serving in crispy corn taco shells, be sure to warm the shells in the oven for a few minutes first. Place on cookie sheet and bake at 350 until they start to sweat (2-4 minutes).
