Ingredients

2 boneless, skinless chicken breasts
salt to season
pepper to season
garlic powder to season
4 cups Greek yogurt
2 cups bread crumbs
1/2 cup lemon juice

Crispy Lemon Chicken Directions

  1. Preheat oven to 350 degrees.
  2. Cut the chicken breasts in half long ways to create 4, thin chicken breasts. Season the chicken breasts with salt, pepper, and garlic powder. Place on cooking tray or baking dish. 
  3. Put 1 cup of Greek yogurt on each chicken breast and spread. Top each chicken breast with 1/2 cup bread crumbs. Bake until chicken is cooked thoroughly and bread crumbs are browned. 
  4. Pour 1/8 cup lemon juice on each chicken breast and bake for 10 more minutes. 
  5. Serve with roasted broccoli or your choice of vegetable.*

*We like to sprinkle salt, pepper, garlic powder, and lemon juice on the veggies then roast them.
